Better browning
Give vegetables some space
A tray can be full without being crowded. Dry surfaces, useful cuts and a little breathing room make the difference.

TAKE IT STEP BY STEP
The method.
Dry before you oil
Heat the oven to 220°C conventional / 200°C fan. Rinse or scrub the vegetables, then dry them well. Water on the surface has to evaporate before browning can build. A shallow metal tray gives the pieces useful contact with a hot surface.
Cut for a shared finish
Dense carrots need thinner pieces than cauliflower. Keep each vegetable’s pieces reasonably similar, rather than cutting everything into identical cubes. Leave a little root attached to onion wedges so they hold together. Remove any very small fragments that would burn early.
Coat, then spread
Toss with the oil, a little salt and pepper until the surfaces shine lightly. Spread in a single layer with small gaps. Put flat cut faces against the tray. Use two trays if needed rather than piling the vegetables into one.
Roast by colour and tenderness
Roast for 25–35 minutes, checking after 20. Turn the pieces once, around halfway through, and rotate the tray if your oven browns unevenly. Remove onion wedges or small florets early if they are ready before the carrots. A knife should enter the carrots easily; the cauliflower edges should be browned.
Dress after roasting
Add a few drops of lemon and chopped parsley or dill after the tray comes out. Taste before adding more salt. Serve promptly, keeping wetter sauces alongside so the browned surfaces stay distinct.
WHEN IT GOES SIDEWAYS
A small fix.
Pale vegetables in a puddle
There is too much moisture or too little space. Divide between trays, and dry washed vegetables more thoroughly next time.
Burnt edges with a firm centre
Cut dense vegetables a little thinner, or lower the oven by 20°C and give them longer. Lift out pieces that are ready instead of waiting for the whole tray.
Everything cooks at different speeds
Roast quicker vegetables on a separate tray, or add them later. This carrot–cauliflower guide is not a timing rule for asparagus, tomatoes or large potato chunks.
Change the seasoning after you have the browning right: cumin and lemon, thyme and black pepper, or a spoonful of yoghurt at the table.
